YIELD: 18 small cookies

DRY INGREDIENTS:                                                                 AMOUNT:

Flour (1/3 cup ground oatmeal, 1/3 cup white- whole-wheat, 1/3 cup traditional 100% whole wheat) 1 cup
Natural stevia powder pinch
Sesame seed (ground) 2 TBsp
Kelp powder** 1 tsp.
Cinnamon 1 tsp
Baking powder ½ tsp
Walnuts (before grinding) ¼ cup

WET INGREDIENTS:                                                                AMOUNT:

Smart Balance® or trans-fat free margarine or other canola oil/butter mixture 3 TBsp
Eggs 1
Polaner All Fruit® (seedless strawberry) 2 TBsp
Almond extract (may substitute vanilla extract) ½ tsp
Raisins ½ cup

*For breakfast, instead of cooking on a cookie tray, you pour the batter into muffin cups, filling them about 1/3 of the way (or maybe ½…they don’t rise much)   The goal is “short” muffins that are nice and chewy, neither or or under done.

**If you can’t find kelp powder you can use dulse flakes or some other seaweed flakes that are very small in size.

METHOD:

  1. 1.    Grind or crush walnuts.
  2. 2.    Mix together all dry ingredients in a large bowl & add walnuts.
  3. 3.    Work Smart Balance® into the dry ingredients until well mixed.
  4. 4.    In a separate bowl whisk together until smooth the All Fruit® and egg.
  5. 5.    Add almond extract to egg/All Fruit® combination.
  6. 6.    Chop raisins.
  7. 7.    Combine all ingredients and mix well.
  8. 8.    Chill one hour or overnight.
  9. 9.    Then drop by spoonfuls onto un-greased cookie sheet, 18 cookies (small)

10. Bake at 350 for 9-10 min. (increase time for larger cookies)

SERVE WITH:

1. Hot green tea with a sprinkle of cinnamon or Chinese 5 spice or

2. Cold green tea/ cranberry juice sweetened with natural stevia
