YIELD: 18 small cookies
DRY INGREDIENTS: AMOUNT:
Flour (1/3 cup ground oatmeal, 1/3 cup white- whole-wheat, 1/3 cup traditional 100% whole wheat) | 1 cup |
Natural stevia powder | pinch |
Sesame seed (ground) | 2 TBsp |
Kelp powder** | 1 tsp. |
Cinnamon | 1 tsp |
Baking powder | ½ tsp |
Walnuts (before grinding) | ¼ cup |
WET INGREDIENTS: AMOUNT:
Smart Balance® or trans-fat free margarine or other canola oil/butter mixture | 3 TBsp |
Eggs | 1 |
Polaner All Fruit® (seedless strawberry) | 2 TBsp |
Almond extract (may substitute vanilla extract) | ½ tsp |
Raisins | ½ cup |
*For breakfast, instead of cooking on a cookie tray, you pour the batter into muffin cups, filling them about 1/3 of the way (or maybe ½…they don’t rise much) The goal is “short” muffins that are nice and chewy, neither or or under done.
**If you can’t find kelp powder you can use dulse flakes or some other seaweed flakes that are very small in size.
METHOD:
- 1. Grind or crush walnuts.
- 2. Mix together all dry ingredients in a large bowl & add walnuts.
- 3. Work Smart Balance® into the dry ingredients until well mixed.
- 4. In a separate bowl whisk together until smooth the All Fruit® and egg.
- 5. Add almond extract to egg/All Fruit® combination.
- 6. Chop raisins.
- 7. Combine all ingredients and mix well.
- 8. Chill one hour or overnight.
- 9. Then drop by spoonfuls onto un-greased cookie sheet, 18 cookies (small)
10. Bake at 350◦ for 9-10 min. (increase time for larger cookies)
SERVE WITH:
1. Hot green tea with a sprinkle of cinnamon or Chinese 5 spice or
2. Cold green tea/ cranberry juice sweetened with natural stevia
