MPN™ Quiche Italiano

– a delicious but not Heart or Brain Healthy Recipe[1]

YIELD:  6 – 8 Servings

  INGREDIENTS:                                                  AMOUNT:

Deep-dish frozen pie crust, thawed*1
Mozzarello cheese, shredded6 ounces (1½ cups)
Spaghetti sauce, home made or low sodium½ cup
Olives, sliced
1/3 cup
Onion, chopped¼ cup
Green or Red bell pepper, chopped¼ cup
Eggs2
Medium cream¾ cups
Kelp powder1 tsp
Black pepper¼ tsp
Cinnamon¼ tsp

*Look for whole-wheat pie crust (hard to find)

METHOD:

  1. Preheat oven to 350 degrees.
  2. Bake pie crust for 6 to 8 minutes, until set, allow to cool.
  3. Layer pie crust with ¾ cup of cheese, then spaghetti sauce, olives, green or red pepper, onion and remaining ¾ cup cheese.
  4. In a medium sized bowl, combine eggs, cream, salt and pepper, mix thoroughly and pour over filling.
  5. Place on cookie sheet and bake for 45 – 50 minutes, or until golden and a knife inserted in center comes out clean.
  6. Cool for 15 minutes, cut into wedges.
