MPN™ Oatmeal with Banana, Berries and Flaxseeds
– a Brain Healthy Recipe[1] –
YIELD: 1 Serving
INGREDIENTS AMOUNT
Banana, sliced | 1 |
Oats, rolled or cracked | ½ cup |
Filtered Water | 1 cup |
Sea salt (may omit altogether for salt-free breakfast) | 1/8 tsp |
Filtered water | 1 cup |
Cold milled flax seeds | 1 TBsp |
Cinnamon | ½ tsp |
Blueberries or diced strawberries (if available) or thawed frozen berries | ½ cup |
Optional: Trans-fat free margarine such as Earth Balance or Essential Balance | ½ to 1 tsp |
Crushed or chopped nuts and seeds, mixture | 1 tsp |
METHOD:
- Add oats to 1 cup of water.
- Bring second cup of water to a boil. Add sea salt and stir in soaked oats.
- Reduce heat, cover and simmer for several minutes.
- Remove mixture from heat, stir in flax seeds, berries, cinnamon, (optional: healthy margarine (e.g. earth balance™ or essential balance®), and banana slices.
- Serve with milk, or half and half.
Optional: garnish with 1 tsp crushed nuts or seeds
Note: Oats and Oatmeal are naturally whole grains and thus a very healthy choice. Oats help lower cholesterol and are heart and brain healthy. Adding the flax seed and berries adds additional essential plant nutrients. Flax seeds contain Omega 3’s, extra fiber and protein. Berries contain anti-inflammatory anti-oxidants and are delicious! Bananas contain potassium and an array of different healthy anti-oxidants. Cinnamon helps blood sugar control and lowering cholesterol.
Oats and Oatmeal also contain a natural appetite suppressant so will keep you full all morning!
