MPN™ Oatmeal Raisin 5 Spice “Muffin” Cookies
– a Brain Healthy Recipe[1] –
WET INGREDIENTS AMOUNT
Egg | 1 large |
Water | ¾ cup |
Canola oil | ¾ cup |
Applesauce | ¾ cup |
Brown sugar | ¾ cup |
Molasses | 2 TBsp |
Almond extract | 1 tsp |
Raisins | 1 cup |
DRY INGREDIENTS:
Whole wheat flour | 2 cups |
Baking soda | 1 ½ tsp |
Sea salt | ¼ tsp |
Green kelp powder | ¼ tsp |
Walnuts or sunflower seeds | ½ cup |
Dry oats | 2 cups |
Chinese 5 spice powder* | 2 tsp |
*Can substitute 1 tsp cinnamon, ½ tsp allspice, ½ tsp nutmeg, and ½ tsp
ground anise or fennel seed.
METHOD:
- Preheat oven to 350 degrees.
- Mix egg and water, set aside.
- Mix oil, applesauce and sweeteners.
- Add other wet ingredients and raisons, and blend.
- Mix dry ingredients.
- Add dry mixture to wet mixture and blend for about 1 minute.
- Using ice cream scoop, scoop mixture into muffin tins or onto cookie sheet.
- Bake in preheated 350 degree oven for 13 – 14 minutes.
