INGREDIENTS AMOUNT
Kashi Seven in the Morning or similar high fiber, high quality, no sugar added cereal | 1 cup |
Rolled oats | ¾ cup |
Whole wheat flour | ½ cup |
Flax seeds (ground) | 1 TBsp |
Walnut pieces | 1/3 cup |
Dried cranberries | ¾ cup |
Baking soda | ½ tsp |
Sea salt | 1/8 tsp |
Ground cinnamon (Saigon/Vietnamese is best) | ½ tsp |
Nonfat vanilla yogurt | 6 oz |
Egg | 1 large |
Egg white | 1 large |
Expeller pressed canola oil | 1/3 cup |
Evaporated cane juice crystals | 2/3 cup |
Vanilla extract | 1 tsp |
METHOD:
1. Preheat oven to 350°F.
2. In a medium bowl, combine all dry ingredients.
3. In food processor, process all wet ingredients until smooth.
4. Add liquid mixture to dry and mix well.
5. Pour batter into a lightly oiled 13 x 9 inch baking dish.
6. Bake for 20-25 minutes. Cool, cut into squares and serve.
