MPN™ Christmas Brain Booster REAL Jello
– A Brain Healthy Recipe[1] –
YIELD: 8-12 1/2 cup or 16-20 1/4 cup or 9 dozen 1 inch cube servings

INGREDIENTS For REAL FRUIT JELLO AMOUNT:
Knox gellatin packets/envelopes | 4 packets |
100% naturally red-colored fruit juice (e.g. Cranberry Juice or a blueberry/pomegranate blend) , cold | 1 cup |
100% naturally red-colored fruit juice (e.g. Cranberry Juice or a blueberry/pomegranate blend), heated to boiling | 3 cups |
Optional: Truvia® | 3 pckts |
Optional Alternative to Truvia: Coconut sugar or raw honey | 2 TBsps |
Optional: Cinnamon, ground – stir into jello or add on top | ½ tsp |
OPTIONAL INGREDIENTS For Stirring into Jello: (This adds 5-10 minutes Prep time)
Chopped almonds, walnuts or pecans or mixture |
(for seniors with dental issues, finely chop or grind up the nuts) 1 cupFruit, frozen or fresh: any kind of berry or fruit, cut as needed into pieces no bigger than a raspberry1-2 cupsOPTIONAL INGREDIENTS For sprinkling on top of Jello before serving: For snowy effect add on top: Greek yogurt or shredded coconut ½-1 cup
METHOD:
- Sprinkle gelatin over cold juice in large bowl and stir. Let stand one minute.
- Heat 3 cups of juice to boiling and stir into bowl with cold juice until gelatin completely dissolves, about 5 minutes.
- Stir in Truvia, coconut sugar or honey if desired for sweetness, or frozen berries or nuts/seeds and stir.
- Pour into 13x9x2 inch pan.
- Refrigerate until firm, about 3 hours.
- Cut into desired size serving (ranging from 1 inch squares to 1/2 cup).
Serve.
Alternative Variations on this theme:
- Vary the flavors of juice, and be sure to use 100% fruit juice!
- Decrease the hot juice to 2 cups, and after adding it to the cold juice and blending together, add 1 cup yogurt (preferably low fat), for a creamy-textured dessert.
- Taste for sweetness; may add small amount of Stevia, honey, agave syrup, or coconut sugar to sweeten, if needed.
- Add 1 -2 cups of cut-up fresh or frozen fruit that complements the flavor of the fruit juice, and/or finely or crudely chopped nuts before pouring the mixture into the 13×9” pan.
- Serve topped with low fat Greek yogurt sprinkled with cinnamon, and chopped nuts and/or shredded coconut.
