YIELD: 3-4 Large Servings
INGREDIENTS: AMOUNT
Olive oil | 1 TBsp |
Onions (chopped) yellow or Bermuda | 1 large yellow or small, medium Bermuda |
Garlic (sliced thin) | 1 clove |
Quinoa (uncooked) | ½ cup |
Chicken broth (salt free) or water or saved stock, salt free* | 2 cups |
Tomato paste or puree | 1 large Tsp |
Calamata olives, pitted & cut in half | ¼ cup or to taste |
21 Season Salute (Trader Joe’s)*** | ½ Tsp |
Parsley, Italian flat preferred, chopped | 5 sprigs |
Cinnamon | ¼ Tsp |
Tomatoes (peeled, seeded and chopped)** | 1 ½ medium tomatoes |
Cayenne or black pepper | to taste |
* Avoid most canned stocks, whether vegetable or chicken as most are loaded with salt. Better to use water and extra spices. Double the amount of listed spices or add some of your own favorites.
** May substitute grape or cherry tomatoes, cut in half and use about ½ pint.
*** If you don’t have a Trader Joe’s near you, use any no-salt mixed green seasoning.
METHOD:
1. Heat the oil in a large skillet over medium-high heat. Add the onions cook and stir for about 5 minutes. Add the garlic, and cook for about 2 more minutes. Stir in the quinoa, chopped parsley, spices, chicken stock or water, olives and tomato paste.
2. Return to a boil, then cover and simmer over low heat for 10-15 minutes, or until quinoa grains are soft.
3. Stir in the diced tomatoes and pepper to taste. Cook until heated through and serve.
Optional for extra brain healthy flavor: Stir in a Tablespoon of lemon-zest flavored Cod Liver Oil (e.g. Carlson’s) just before serving.
