YIELD:  4-6 Servings

INGREDIENTS:                                                  AMOUNT

Olive oil 2 TBsp
Onions (chopped) 2 large
Green Bell Pepper (seeded and chopped) 1
Red Bell Pepper (seeded and chopped) 1
Yellow Bell Pepper (seeded and chopped) 1
Garlic (sliced thin) 2 cloves
Quinoa (uncooked) ¾ -1  cup
Parsley, Italian flat preferred, chopped 10 sprigs
21 Seasoning Salute (Trader Joe’s)** 1 Tsp
Cinnamon ½Tsp
Vegetable broth or stock 4 cups
Optional variation: pistachio or pine nuts ¼ – ½ cup
Optional variation: raisons or dried cranberries ½ cup
Tomato puree 1 TBsp
Tomatoes (peeled, seeded and chopped) 3 medium
Cayenne or black pepper to taste

* Avoid most canned stocks, whether vegetable or chicken as most are loaded with salt.   Better to use water and extra spices.  Double the amount of listed spices or add some of your own favorites.

** If you don’t have a Trader Joe’s near you, use any no-salt mixed green seasoning.

METHOD:

  1. 1. Heat the oil in a large skillet over medium-high heat.  Add the onions, and peppers, cook and stir for about 5 minutes.  Add the garlic, and cook for about 2 more minutes.  Stir in the quinoa, chopped parsley, spices, vegetable stock or water, and tomato puree.
  2. 2. Return to a boil, then cover and simmer over low heat for 10-15 minutes, or until quinoa grains are soft.
  3. 3. Stir in the diced tomatoes and season with cayenne or pepper to taste.  Cook until heated through, then serve.

Optional for extra brain healthy flavor: Stir in a Tablespoon of lemon-zest flavored Cod Liver Oil (e.g. Carlson’s) just before serving.
