MPN™ Healthy & Delicious Apple Crisp (Low Glycemic Index)

A Brain Healthy Recipe[1]

YIELD:  12 Servings

 

INGREDIENTS For TOPPING:                                                           AMOUNT:                      

Whole wheat pastry flour or white whole wheat flour 1 cup
Oatmeal or 1/2 Oatmeal (or mixed whole grain cereal) and 1/2 (low sugar) Granola Mix 1 ½ cups
Cinnamon, ground 1 TBsp
Nutmeg, ground ½ tsp
Cloves, ground ½ tsp
Truvia® (or 1/4 tsp pure stevia powder) 2 tsp/3 pckt
Coconut sugar  (if not available, use another 2 tsp of Truvia) 3-4 TBsps
Canola oil (or 90/10 canola/olive oil mix) 1/4 cup
Healthy fat fatty oil spread/shortening with NO trans fats (e.g. Earth Balance, Smart Balance) and/or butter (e.g. 50-50 mix) ½ cup
Chopped almonds, walnuts or pecans or mixture 1/3-½ cup (1/6 – 1/4 lb.)

 

INGREDIENTS For APPLE MIX:

Apple juice or apple cider (100% juice)

1 pint
Arrowroot powder (may substitute tapioca flour) 2 TBsps
Cinnamon, ground 1 TBsp
Apple slices in natural juices if canned, or apples cored and sliced medium if fresh 1 quart
Truvia® (or pinch of pure stevia powder) 1 tsp or 1 packet

 

METHOD:

  1. 1.    For Apple Mix: Bring 1 point apple juice to a boil, thicken with 2 TBsps tapioca flour or arrowroot powder to produce a glazing mixture.
  2. 2.    Add apple slices.
  3. 3.   Add 1 TBsp cinnamon, 1 tsp (or 1 packet) of Truvia® and stir.
  4. 4.   Place this apple/juice mixture into hotel baking pans.
  5. 5.   For Crisp:  Place oil, flour, oatmeal, Truvia®, cloves, nutmeg, 1 TBsp cinnamon and lastly chopped nuts in a large mixing bowl or power mixer.  Mix these ingredients for a few minutes.
  6. 6.   Spread over the hot apples.
  7. 7.   Bake at 375 degrees for 30 minutes. Test if apples are tender; then serve.
