Easy no-bake date nut balls – great for the Holidays
YIELD: 16 cookies
INGREDIENTS: AMOUNT
Bran flakes cereal (or brown-rice bran flakes) | 2 cups |
Whole pitted dates (chopped) | ¾ cup |
Pecans, toasted | ½ cup |
Cinnamon | ½ tsp |
Honey | 3 TBsp |
Cream cheese (softened) | 2 TBsp |
Orange juice | 2 tsp |
Finely chopped nut, coconut or wheat germ (toasted) or 50/50 mix wheat germ/ground flaxseed | ½ cup |
METHOD:
1) Place cereal, dates and pecans in a food processor and process until finely chopped. Add honey, cream cheese and orange juice and pulse until a stiff dough forms.
2) Scoop tablespoon-size portions and shape with greased hands into balls. Roll each ball in chopped nuts (or coconut or wheat germ or 50/50 mix wheat germ/ground flaxseed). Place on wax paper.
3) Let stand at room temperature for 30 minutes before serving or storing.
Nutritional Information Per cookie: 104 calories, 6 g fat (1 g sat, 3 g mono), 2 mg cholesterol, 14 g carbohydrates, 1 g protein, 2 g fiber, 42 mg sodium, 111 mg potassium.
