A quick sugar-free recipe
YIELD: 5 servings (2 balls each)
INGREDIENTS: AMOUNT:
Coconut (desiccated) | 5 ounces |
Egg whites | 3 |
Erithritol or xylitol
or Truvia or Stevia |
3 TBsp
2 tsp 1/8 tsp |
Lemon juice | 1 ½ TBsp |
Arrowroot or tapioca starch | 1 TBsp |
* Variations: add ½ tsp ginger powder or ground cinnamon to the mix for added
flavor
METHOD:
1. Preheat oven to 350 degrees.
2. Line a large baking tray with baking parchment.
3. Combine all the ingredients in a mixing bowl to form a paste.
4. Shape into ten balls using your hands (press quite firmly to make sure they don’t fall apart after cooking).
5. Bake for 20 minutes, then leave to cool before storing in an airtight container.
