MPN™ “Cocoa-Nut” Bananas 

– A Brain Healthy Recipe[1]

YIELD: 4 Servings

 

 INGREDIENTS:                                                  AMOUNT

Bananas, sliced on the bias  2 small
Cocoa powder (unsweetened) 4 tsp
Toasted unsweetened coconut 4 tsp

 

Variations: Mix 1 tsp of cinnamon and/or 1 tsp ground flax seed with the cocoa powder before dipping the banana.

 

METHOD:

1)   Place cocoa and coconut on separate plates.

2)   Roll each banana slice in the cocoa, shake off the excess, then dip in the coconut.

Serve!

 

Nutritional Information per serving: 80 calories; 1 g fat ( 1 g sat , 0 g mono ); 0 mg cholesterol; 19 g carbohydrates; 1 g added sugars; 1 g protein; 2 g fiber; 5 mg sodium; 274 mg potassium.
