MPN™ Tuna and Fresh Tomato Pasta Sauce

– a Brain Healthy Recipe[1]

YIELD:  Serves 4

 

INGREDIENTS:                                                         AMOUNT:       

Whole wheat or gluten/wheat-free pasta 7 ounces
Tuna fish, canned in brine or water* 2 – 6 ounce cans

 

Tomato Sauce:

Garlic, crushed 4 cloves
Red onions, finely diced 2
Olive oil, non-virgin 4 TBsp
Cherry tomatoes, chopped 9 ounces
Tomato puree 4 TBsp
Cinnamon ½ tsp
Pepper, freshly ground To taste

*May add 4 TBsp pine nuts toasted in a dry frying pan until golden for extra flavor.

*OR, may substitute canned salmon for the canned tuna

 

METHOD:

  1. Cook pasta according to the package instructions.
  2. Sweat the garlic and onion in the oil in a frying pan for about 3 minutes, or until transparent.
  3. Add the tomatoes and cook for 2 minutes, or until soft.
  4. Stir in the tomato puree, reduce the heat and simmer for about 5 minutes, or until rich and thick.
  5. Season with spices and taste to check flavor.
  6. Add the cooked pasta to the pan (along with the tuna or pine nuts), stir together and heat through.
