MPN™ Tuna and Fresh Tomato Pasta Sauce
– a Brain Healthy Recipe[1] –
YIELD: Serves 4
INGREDIENTS: AMOUNT:
Whole wheat or gluten/wheat-free pasta | 7 ounces |
Tuna fish, canned in brine or water* | 2 – 6 ounce cans |
Tomato Sauce:
Garlic, crushed | 4 cloves |
Red onions, finely diced | 2 |
Olive oil, non-virgin | 4 TBsp |
Cherry tomatoes, chopped | 9 ounces |
Tomato puree | 4 TBsp |
Cinnamon | ½ tsp |
Pepper, freshly ground | To taste |
*May add 4 TBsp pine nuts toasted in a dry frying pan until golden for extra flavor.
*OR, may substitute canned salmon for the canned tuna
METHOD:
- Cook pasta according to the package instructions.
- Sweat the garlic and onion in the oil in a frying pan for about 3 minutes, or until transparent.
- Add the tomatoes and cook for 2 minutes, or until soft.
- Stir in the tomato puree, reduce the heat and simmer for about 5 minutes, or until rich and thick.
- Season with spices and taste to check flavor.
- Add the cooked pasta to the pan (along with the tuna or pine nuts), stir together and heat through.
